How to make the best fluffy pancakes this Pancake Day

If you’re anything like me, you’ll be just as excited for pancake day as I am. As someone who loves pancakes, I have tried multiple recipes to get the best mixture and the easiest method. Here’s a super quick recipe for light and fluffy pancakes with simple ingredients you probably already have at home instead of buying a ready mix from the store.

Here’s What You’ll Need: 

300g of flour 

70g of caster sugar or sweetener of your choice 

60g of butter 

¼ teaspoon baking powder 

¼ teaspoon salt 

440ml of your preferred milk 

2 teaspoons vanilla extract 

1 large egg 

2 tablespoons of melted butter

  1. Start by combining the sifted flour, sugar, salt and baking powder gently in a large bowl until soft and separated.
  2. In another bowl/jug, lightly whisk together the milk, egg, vanilla extracts and warmed butter.
  3. Once mixed, pour in the mixture to the dry ingredients slowly and whisk. Keep whisking and the bumps should soon disappear and the batter will be ready to cook. Do not worry if there are still a few persistent bumps in the batter. 
  4. Whilst letting the batter sit, heat up a non-stick frying pan on a medium heat with a little knob of butter
  5. When the butter has melted and looks frothy pour the mixture on to the pan at your preferred size. If you are cooking more than one at a time ensure they are not too close together.
  6. You may notice the top bubbling up; this is a good indication that it is time to flip over making sure both sides are cooked golden and risen. This should take around 1-3 minutes depending on your cooker and personal preference  
  7. After it is baked, remove your yummy pancakes from the pan carefully, wipe away any residue prior to making your next batch, as the butter may burn on the hot pan and alter the sweet taste of the pancake.
  8. Repeat this process until all the batter is used up and ready to munch.
  9. Serve with toppings of your choice (we love chocolate or honey along with some yummy fruit).

Excited for pancake day but holding back because you can’t find a wholegrain alternative? Well, we’ve got the perfect recipe for you! It’s very simple and only a few ingredients are needed. It can also be tailored by using almond or oat milk instead. 

Ingredients You’ll Need: 

50g of self-rising flour

50g whole grain flour 

2 separated eggs 

150ml of milk (any variant) 

Recipe: 

1) Begin by combining the sifted flours together to remove any unwanted lumps. You may want to add a little sugar but if not add in the egg yolks. Little by little add the milk to mix until a soft batter is formed with no lumps. 

2) Whisk the egg whites until folded properly. When the consistency is a thick glossy texture add to the first mixture, try not to over whisk or squash the air out as you do this

3) After this is completely mixed, heat a non-stick pan with enough batter to the size of your choice and cook until bubbles on the top begin to form. You may want to add coconut oil to the pan as an alternative oil.
